Having previously worked for Wolfgang Puck Catering, in downtown Dallas, I have met culinary professionals like Chef Trenton Gastrix. There is something else I should stress. I can see myself in Gastrix. They are always an acquired taste. Every qualified chef, myself included, has rules they are willing to break.
